Let’s get this out of the way right up front. I’m a white boy from suburban Sydney. Who didn’t even consider Mexican food until long after I’d finished my Aprenticeship. How ever I did train and learn my craft at some pretty good venues. Bathers Pavilion, Berrowa Waters Inn, Bennalong, as well as Stages at Quay, Attica and The Royal Mail Hotel. There was a period of my life I guess about 2 years were I backpacked across the world studying cooking anywhere that had a history of using spices after that I was hooked a love affair with Spice.
